The MAT Watches Egg Master II, a Dive Watch… for Perfect Eggs

A solid automatic diver with an unusual bezel to time your eggs, because that's probably more useful for most of us.

Face an inconvenient truth about dive watches. Even with their awesome water-resistance ratings and overengineered cases, most will never explore the bottom of the sea. Their rotating bezels are far more likely to time pasta, something in the oven or even a parking meter. French brand MAT Watches (Mer-Air-Terre) clearly understands this and, with a bit of humour and a certain irony, has transformed the familiar dive watch bezel into a dedicated egg-cooking instrument. Meet the new Egg Master II.

As you can guess from its name, this watch isn’t MAT’s first trip to the kitchen. The original Egg Master was launched almost five years ago, but this second edition is a considerably more accomplished watch. Developed by MAT founder Fabrice Pougez together with journalist Paul Miquel and chef Fabien Pairon (Best Craftsman (MOF) 2011, World Champion of Œuf Meurette in 2023, visit his restaurant Auberge Communale du Mont-sur-Lausanne in Switzerland), the watch can time four preparations: poché, coque, mollet and dur – poached, soft-boiled, medium-boiled and hard-boiled eggs, requiring 2 min 35-45, 3 min 5-15, 5 min 55-60 and 8 min 20-30 of cooking time, respectively.

The use is simple. Rotate the bidirectional aluminium bezel until the desired cooking style aligns with the minutes hand’s current position. When the seconds hand reaches zero, start cooking. The bezel indicates the required minutes, while coloured zones on the inner dial ring provide the final seconds countdown – yes, perfect eggs are a matter of seconds. The timings are calculated for medium-sized 53-gram eggs cooked at sea level; altitude affects your breakfast.

The Egg Master II is based on MAT’s Picobello case and, underneath the playful concept, is a properly constructed sports watch. Made from 316L stainless steel, it measures 39.5mm in diameter and 12mm thick. The proportions are compact, and the watch feels solid and well-built. A domed sapphire crystal with an anti-reflective coating reinforces the slightly retro appearance, while the oversized 7.5mm screw-down crown and 200m water resistance provide genuine dive-watch specs.

The off-white dial – well, obviously eggshell-toned – is highly legible, with large markers and broad hands treated with Super-LumiNova and outlined in black for contrast. Orange, green, blue and red accents distinguish the different cooking zones and are repeated on the bezel. Plenty is happening, but the familiar tool-watch construction keeps the display easy to understand.

One of the biggest changes compared to the original Egg Master is inside. The quartz movement is replaced by an automatic Soprod M100, a Swiss alternative to the ETA 2824 and Sellita SW200. Operating at 28,800 vibrations/hour, the movement offers about 42 hours of power reserve and can be seen through the transparent screw-down caseback.

The watch is delivered with three straps: yellow and beige Tropic-style rubber straps and an appropriately named eggshell canvas strap. The new MAT Egg Master II is offered as a limited-edition subscription.
